Yogiratna, also known as Valval, is a beloved Konkani dish from India’s western coast, especially Mangaluru, Udupi, and parts of Kerala. Made with seasonal vegetables simmered in fresh coconut milk, it reflects the region’s natural richness. Meaning “jewel of the yogis,” Yogiratna is a calm, sattvic dish cooked without onion or garlic, perfect for festive and auspicious occasions. To accompany it, a flavorful Garlic chutney is prepared. Today, Chef Sheela Nayak shows us how to make both Yogiratna and Garlic Chutney. Yogiratna The Star Ingridents 1 cup thick coconut milk 1/2 tea spn cumin seeds 1/2 tea spn mustered seeds Coconut oil Turmeric Curry leaves Salt 3 cups chopped vegetables Pumpkin Potato Bell peppers (Yellow, Red, Green) Green beans Carrot Tender cashews (bibbo)/Soked Cashew nuts 3-4 green chilies Method In a pressure cooker, add pumpkin, potato, bell peppers (yellow, red, and green), green beans, carrot, green chilies, and cashew nuts. Add a little water and cook for one whistle only. In a kadhai (pan), heat a little coconut oil. Once the oil is hot, splutter mustard seeds, cumin seeds, curry leaves, and add a pinch of turmeric powder. Mix well. Add the boiled vegetables to the kadhai and stir gently. Pour in thin coconut milk and add salt to taste. Bring it to a gentle boil. Do not boil on high flame — keep stirring occasionally to prevent the coconut milk from curdling. After about 10 minutes, turn off the flame. Serve hot Yogiratna (Valval) with steamed riceand enjoy the mild, creamy flavors. ------------------------------------------------------- Garlic Chutney The Star Ingridents 1 cup grated coconut 5 red chillies 6 garlic cloves Salt to taste Water, as required to blend Method: In a small blender, add the grated coconut, garlic cloves, red chillies, and salt. Blend once without adding water. Then, add water as required and blend to a smooth paste.
