Few dishes truly show the soul of Karnataka food like Prawn Curry, also known as ‘Sungta Ambat.’ This curry has a perfect mix of spicy, tangy, and coconut flavors that remind you of the coastal kitchens of Karnataka. Its bright color and rich aroma make it very comforting, especially when eaten with soft neer dosa or steamed rice. The best thing is that it tastes even better the next day as the flavors come together. This lovely recipe is shared by home cook Reshma Kamat. Ingredients Fresh prawns (cleaned) – 1 bowl Onion – 1 (finely chopped) Tamarind – small round Dried red chillies – 4–5 Coriander seeds – 1 tsp Coconut oil – 1 cup Salt – to taste Turmeric – 1 tsp Grated coconut – ½ cup Method 1. Heat coconut oil in a kadhai. Add coriander seeds and dried red chillies, and roast them well for 4–5 minutes. 2. In a mixer, add grated coconut, roasted coriander seeds, dried red chillies, turmeric, and tamarind. Add water as needed and grind the mixture into a fine paste. 3. Heat 2 tsp of oil in a kadhai. Add finely chopped onion and fry until golden brown. 4. Add the prawns and fry for 5 minutes until they change color. 5. Add the prepared paste to the prawns. Adjust the consistency by adding water as needed. 6. Add salt to taste. 7. Bring it to a boil and cook for 10 minutes. 8.
